Marinated Lamb Leg Steaks
Ingredients:
4 Sun Raised Foods lamb leg steaks
3 tablespoons olive oil
2 tablespoons lemon juice (freshly squeezed)
2 cloves garlic (minced)
1 tablespoon fresh rosemary (or 1 tsp dried)
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and black pepper to taste
Optional: 1 tablespoon balsamic vinegar or red wine (for depth)
Make the Marinade:
In a bowl, whisk together olive oil, lemon juice, garlic, rosemary, cumin, paprika, salt, and pepper. Add balsamic vinegar or red wine if using.
Marinate the Lamb:
Place the lamb steaks in a shallow dish or resealable bag.
Pour the marinade over the steaks, ensuring they’re well coated.
Cover or seal and refrigerate for at least 2 hours (ideally 6–8 hours or overnight for full flavor).
Grill:
Remove lamb from fridge 30 minutes before cooking to bring to room temp.
Preheat grill to medium-high heat.

Rest and Serve:
Pull steaks off at 135° for medium rare - final temperature will be 145° after resting for 3 minutes.
